  • Boil squash until tender crisp, drain in colander.
  • Saute onions and garlic, until tender, add seasonings and cook gently for a minute or two.
  • Stir in drained squash and canned green chilies, stir to combine. Mix sour cream, cream cheese, salsa verde and shredded cheese. Fold the sour cream mixture into squash onion mixture.
  • Taste test may need more seasonings.
  • Pour into 9 x9 pan, top with crushed crackers, drizzle with melted butter.
  • Bake at 425 until golden crisp, about 25 minutes.
