You Can't Beat 'em Healthy Blender Muffins

"No sugar, no honey- these muffins are naturally sweetened with fruit and loaded with delicious nuts and seeds. You can't beat these for healthiness or for flavor, considering how good they are for you! Whip out your blender and you'll have these muffins ready in a flash- can't beat that, either!   • Preheat oven to 350°F.
  • Blend the apple, prunes and dates until pureed.
  • Add the bananas, eggs, butter, vanilla, salt and juice and blend again.
  • Mix together the remaining ingredients in a large bowl.
  • Add the blender mixture to the ingredients in the bowl and mix well.
  • Pour into greased or lined muffin tins and bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.

  1. Fabulous! These muffins are great – who would have guessed they are chock full of healthy stuff! The batter came together beautifully, though I did have to use my food processor instead of my blender to get the apples, prunes and dates started. Once they were chopped fine I put them in the blender with the rest of the wet ingredients and everything went smoothly. I expected these to be dense because they didn’t rise a whole lot, but they came out surprisingly light and incredibly tasty with just the right amount of sweetness. The only change I made was to substitute roasted pumpkin seeds for the sunflower seeds because that is what I had on hand. I got 12 generous sized muffins out of this recipe.
     
  2. I used my vitamix and I couldn't get these turn mix in the blender very well, I ended up emptying it out and mixing by hand after I added the flour. The resulting muffins were ok, but not great.

Then, because I saw a need to round some things off a bit (& up!), I used 12 prunes & 12 Medjool dates & came out in the end with some WONDERFULLY TASTING MUFFINS! Thanks for sharing the recipe!   4. I also found these to be a little dry. But the flavor was good, I put a little butter on them to take away the dryness a bit. Maybe low fat cream cheese would be better but I had none. I did sub apple sauce for butter and I did use white flour (not a big fan of whole wheat) When I pureed the apple (with skin left on), and dates I added the juice the same time made for easier to pureed. I did not use prune I had none. I also added walnuts , I love walnuts. Will make again.

  3. These were very yummy! I subbed applesauce for the butter and added some wheat germ. Leave the peel on the apple, it ups the fiber content. Next time I make them I will add either some splenda, honey or more dates to up the sweetness.
