  • In a skillet over medium high heat, cook the soy protein crumbles, mushrooms and onion for 5 minutes or until vegetables are tender.
  • Stir in soup. Cover and heat to boiling.
  • Stir in pasta; reduce heat to medium low; cover and simmer for 10 minutes.
  • Stir in spinach; and cook uncovered for another 5 minutes, stirring occasionally or until spinach is hot and begins to wilt.
  • Sprinkle with cheese.

  1. Very good, so easy to prepare and make, the mushrooms, though were not to my taste in this. I am going to make again, I might have done something wrong. To me they were a tad bit soggy. All in all though, not bad though.

<p>I love cooking and trying different foods, but my favorite cookbooks are now Weight Watchers or low fat/low cal cookbooks as I tend to try and make low fat/low cal recipes. I lost over 90 pounds on Weight Watchers and have maintained for over a year now -- so my cooking/eating habits have changed drastically following my weight loss and to keep it off!</p>
