Wonderful Baked Spinach

"A recipe I have recently found in my Grandmother's recipe box. This is a lovely way to enjoy spinach in a new way. Goes great with an un-oaked chardonnay."

  • Heat oil in a skillet and sautee onion and garlic for 6 or 7 minutes with italian seasoning.
  • add wine and let reduce.
  • mix all ingredients together in a large bowl.
  • Bake in a casserole at 350 for an hour.

  2. I am surprised that this has not yet been rated. It was a big hit with the family. I did not have any white wine so the next time I will be sure to have some. At first I was afraid that the cheddar cheese would be too much of a dominant taste but it blended well with the cottage.

My name is Amy and I live in CT. I love to cook and try new recipes. My kitchen is my favorite room in my house and where I spend most of my time! Both my parents were always cooking, mom baked and dad did everything except baking. Some of my recipes come from my grandmother, Nell, but have been updated. The rest fly out of my head in the middle of the night...or are things I have seen in magazines, cookbooks and on TV twisted around to my liking. I find it hard to follow a recipe, but I am trying to do that without changing them all the time.
