Whole Wheat Cottage Cheese Pancakes

ingredients
- 1 cup low fat cottage cheese
- 4 eggs
- 3 tablespoons applesauce
- 1⁄2 cup soymilk
- 1⁄2 teaspoon vanilla extract
- 1⁄2 teaspoon cinnamon
- 1 cup whole wheat flour
- 1⁄2 teaspoon baking soda
- 2 tablespoons sugar
- 1 pinch salt
directions
- Blend the cottage cheese, eggs, applesauce, soy milk, and vanilla extract in a blender until thoroughly mixed.
- Add the dry ingredients and pulse on and off until just blended.
- Heat pan on medium. Coat with butter or oil spray. Pour by 1/8 cupfuls (nice small size for toddlers and kids, otherwise use 1/4 cup). Flip when nicely browned.
- Serve with a sprinkle of powdered sugar, maple syrup, or jam.

These are new favorite breakfast staple! I rarely made pancakes b/c the lack of nutrition in them - but my kids love them. These taste yummier than any other pancake I've had, plus they've got good protein and whole wheat! I used Splenda in place of sugar, and added a little nutmeg and vanilla. Don't even need toppings, they're so good, but we like to eat them with natural jam or peanut butter. Sometimes I simmer some fresh or frozen strawberries on the stove for a nice sweet sauce. Also, great for the freezer! I always make a double or triple batch and wrap individual 2-pancake servings in plastic wrap, and then I throw them all into a freezer bag. This way on busy mornings I can pull as many as I need out and pop them in the microwave for 1-2 minutes.

These were VERY GOOD! I made the following changes: Egg Beaters instead of eggs and skim milk instead of soy milk. I had planned to serve them with butter & maple syrup, but my kids liked them plain! The only reason I'm not giving this 5 stars is that personally, I like fluffy pancakes and these had a more crepe-like texture....very thin. Thanks for sharing!
