4-Ingredient Cottage Cheese Pancakes

"This is Pamela Lanier's Bed and Breakfast recipe from the Inn at Round Barn Farm in Vermont. I love it since it is fail proof and delicious! I make this at least once a week and have also made extra to freeze for later."

  • Whip cottage cheese in KitchenAid or similar mixer. Add the flour and eggs and start the mixer again. With mixer on, add melted butter. This should be a thick batter.
  • Test a small amount of batter on grill. Add a small amount of flour if it needs thickening.
  • Cook pancakes until golden, then flip and cook for an additional minute. Do not overcook. These pancakes are moist and should spring back to the touch.
  • Serve plain or with favorite topping.

  1. I've made several cottage cheese pancake recipes. This is my favorite. I like using the mixer on the cottage cheese before adding the rest of the ingredients. Very easy! My kids loved tonight's breakfast dinner. Thank you.
     
  2. So good. Light and fluffy. My DD and DH love them. I halfed the recipes because normally they dont eat a lot of pancakes. I got got 4 good size pancakes out of it. The next time I will make the full batch since everyone was hmmm ahhh and asked for more.
     
  3. OMG!! I cannot wait to mix a batch for my grandkids! They will think their granddad is a chef!!! Very easy and extremely good!

<p>I've noticed plenty of members are animal lovers. That helps me feel right at home. I have 3 cats that I could tell stories about all day.. <br />My daughter is 9 and never know what to expect when it comes to meal time unless she put in a special request. <br />I love cooking new things all the time since I get bored fairly quickly. Of course there are those recipes that I can't get out of my head and I make them over and over. <br />Following directions is very difficult for me so I use recipes as guidelines and that is it. If something really works for me, I post it. <br />A lot of my favorite recipes are copy cat. I would much rather make something I love from a restaurant than actually go. <br />I make Alice Springs Chicken monthly and Cottage Cheese pancakes at least 4 times a month. Those two recipes will never get old in this house. <br />If I'm taking pictures of my freshly made food, my DD knows she's gonna be trying something new.
