- 2 cups oats
- 1 cup whole wheat flour
- 1⁄2 cup soy flour
- 1⁄2 cup all-purpose flour
- 1⁄4 cup brown sugar
- 1⁄2 cup Splenda sugar substitute
- 1⁄3 cup all-bran cereal
- 1⁄3 cup bob's red mill apple cinnamon and grains cereal
- 2 tablespoons baking powder
- 1 teaspoon salt
- 2 eggs
- 1⁄2 cup fat free sour cream
- 1 cup skim milk
- 1⁄2 cup canola oil
- 1⁄3 cup honey
- 1 apple (grated)
directions
- mix dry ingredients.
- Mix wet ingredients in seperate bowl.
- Add to dry ingredients.
- Stir quickly until dry ingredients are just moist. Batter will be thick.
- Fill muffin cups 2/3 full.
- Bake for 15 minutes at 400 degrees.
- makes aprox 36 muffins.
