- 1 tablespoon butter (unsalted)
- 1 tablespoon olive oil
- 1⁄2 lb sliced mushrooms (shiitake and oyster)
- 1⁄2 cup finely chopped red onion
- 1 cup bulgur (preferably coarse)
- 2 cups chicken broth (or vegetable broth, to make this dish vegan)
- 1⁄2 lb Brussels sprout
- 1⁄4 cup packed fresh flat-leaf parsley
- 1 teaspoon fresh thyme
- 1⁄2 teaspoon salt
- pepper, and khmeli suneli
directions
- Sauté onions, mushrooms and quartered Brussels sprouts in oil and butter. Stir in bulgur, salt and pepper and sauté for a minute or two. Add boiling broth, fresh thyme and return to a boil. Cover and place in 350F oven for 20-25 minute Toss parsley, fluff the bulgur with a fork and check seasoning.
