- 1 cup unbleached all-purpose flour or 1 cup whole wheat pastry flour
- 1 cup oatmeal, processed in blender
- 2⁄3 cup flax seed meal
- 1 1⁄2 teaspoons baking powder
- 1 teaspoon salt
- 1⁄3 cup sugar
- 3 tablespoons molasses
- 1 teaspoon vanilla
- 1 3⁄4 cups skim milk
- 1⁄4 cup oil (I use canola)
- 1 egg
directions
- Place all wet ingredients in mixing bowl.
- Combine dry ingredients in separate bowl.
- With mixer running, add dry to wet a few spoonfuls at a time until batter consistency is reached.
- Cook on preheated waffle maker approximately 3 minutes.
