Waxy Oatmeal Cookies

ingredients
- 2 cups ground oatmeal
- 2 cups flour
- 1 teaspoon cinnamon
- 1⁄2 teaspoon salt
- 1 tablespoon baking soda
- 1 tablespoon hot water
- 2 large eggs
- 1 cup Crisco
- 1 cup sugar
- 1 cup brown sugar, packed
- 2 cups ground raisins
directions
- Place all ingredients in at once and mix.
- I pulsed the quick oatmeal in a food processor to achieve a finer texture.
- Roll into ball size of walnut and roll in powdered sugar.
- Bake on greased cookie sheet at 350° for 10-12 minutes. DO NOT OVERBAKE.

These tasted great. But I had to add extra liquid to get the dough to hold together. They didn't come out looking waxy in my opinion either. I also had a hard time getting the cook time right. I think we ended up leaving them in for 15 minutes. And we also had to roll them smaller than walnuts or they didn't spread very well. And I found that the ones that I did on an ungreased tray actually turned out better. They seemed to spread more evenly. I am rating them 4 stars because the flavour was so good. But I would give the dough 3 stars due to difficulty.

I love cooking, and reading Christian fiction..I have 5 grandchildren..4 boys and 1 spoiled granddaughter...I also have a black cocker spaniel named Tobey..who is very spoiled..Love computer games, cross stitch and reading cookbooks..I was diagnosed with Acute Myeloid Leukemia almost a year ago, on September 26, 2005....was in an out of the hospital for 8 months, doing intensive chemo...I am doing well now, thanks for all the prayers...
