Virtually Fat Free Banana Bread

"My grandma raves about my banana bread, so I am constantly making it for her. I decided to play with the recipe to find a "better for me" option, and the results were amazing! I think my "healthified" banana bread tastes better than the full fat version! I usually add in chopped walnuts, but they add fat, so this is optional. This makes a lot of bread, so I usually half the recipe. Enjoy!"

  • Peel bananas and mush together in a bowl. Try to get consistency as smooth as possible.
  • Mix in eggs, milk, applesauce, vanilla and stir until smooth.
  • Mix in the next four ingredients, blending well.
  • Add in walnuts if you would like.
  • Bake at 350 for about 45 minutes or until bread is brown on top.

  1. I excluded the walnuts and used egg replacer, making it really virtually fat free and it was delicious! My husband even likes it and he is not a healthy diet eater at all. Thank you so much, it's fabulous!
     
  2. This recipe was great! I only had 3 bananas so I did a half recipe with them. I also used whole wheat flour and everything turned out perfect! Very moist with just the right amount of sweetness to it. I will definitely keep making again and again.
     
  3. I really enjoyed this banana bread and was amazed that it didn't require any oil or butter- it was so moist! I used a mixture of splenda, sugar and brown sugar, but next time I may just try the splenda. I added mini chocolate chips since that is the way my dh likes his banana bread. Thanks for a GREAT recipe!
     
  4. WHOA! I took your advice and halved the recipe, and this turned out great! If anything, it was too moist (of that's possible)! I throw a slice of this in the toaster oven every morning and enjoy with my yogurt. yummmmmmmy!
