- 1 cup green cabbage, thinly sliced
- 1⁄2 cup chopped red bell pepper
- 3 green onions, finely chopped
- 1⁄4 cup water
- 2 tablespoons minced parsley
- 1 teaspoon dried basil
- 1 cup whole wheat bread crumbs
- 1⁄4 cup roasted sunflower seeds
- 1⁄4 cup cooked brown rice
- 2 egg whites, beaten
- vegetable oil cooking spray
directions
- Coat a skillet with olive oil. Add cabbage, bell pepper and green onions; sauté for 5 minutes. Add water a little at a time. Cook until all liquid evaporates. Remove from heat; stir in parsley and basil.
- In another bowl, combine bread crumbs, sunflower seeds and rice. Stir in egg whites. Add vegetable mixture.
- Drop batter by spoonfuls onto skillet sprayed with vegetable cooking spray and flatten to form burgers. Brown on both sides for 5 minutes.
