- 3 ripe bananas
- 1⁄2 cup maple syrup
- 3 tablespoons canola oil
- 1 1⁄2 cups spelt flour
- 1 1⁄2 teaspoons baking soda
- 1⁄4 teaspoon salt
- 3⁄4 cup pecans
- 1 teaspoon vanilla
directions
- Heat oven to 350°F.
- Oil a loaf pan.
- In a bowl, mash bananas and mix in the maple syrup, canola oil, and vanilla.
- In a separate bowl sift the dry ingredients together, adding the nuts last.
- Blend the wet and dry mixtures and pour into the loaf pan.
- Bake for 42 minutes.

These were delicious. I made a few changes: I made these as mini loaves. I used sprouted spelt and the dough was very dense. Rather than add another banana I used 6 TBSP of aquafaba, that I whipped just until it turned white ( it took less than 30 secs). I stirred it in using my Tivoli dough wisk ( my new favorite kitchen tool). I used baby bananas ( 4) instead of the traditional cavendish bananas. They were a bit green which I prefer as the sugar is reduced. I ommitted the nuts and added a bit of allspice and cloves; used grapseed oil; 3 Tbsp maple syrup ( I prefer my breads on the rustic side). Lastly I used an entire tsp of vanilla extract. They had a nice crust on the outside and they were nice and fluffy inside. This will be my go to banana bread recipe.

This is yummy!!! Always excited to find good recipes that have healthier ingredients and tastes like it's an indulgence!! I added some pumpkin puree instead of 3rd banana because I only had 2 banana's and I had some leftover pumpkin from another recipe!! I also added cinnamon and all spice and used 2 tblsp of coconut oil instead of canola oil!! Turned out awesome!! My 18 month old son loves getting muffins and I feel good giving him this!!! Will be making this again!!

Update: 2 days later this bread is still delicious, but as the flavors have developed I would definitely reduce the maple syrup even further. Next time I will add 3 TBS. Original review: This is the best banana bread recipe I've tried! It's very moist and flavorful. I reduced the maple syrup to 1/4 cup because I added some chocolate chips. Otherwise, I followed the recipe as written. Thanks for sharing!!!
