- 1 cup brown sugar
- 1 cup white sugar
- 3 cups flour
- 3 cups quick-cooking oats
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- 1⁄2 teaspoon nutmeg
- 1⁄8 teaspoon allspice
- 1⁄4 teaspoon ginger
- 1 1⁄2 teaspoons salt
- 1 tablespoon vegan egg replacer powder (Ener-G)
- 1 cup oil
- 1 cup water
- 1 teaspoon vanilla
- dried fruit (optional)
directions
- Preheat oven to 400 degrees F.
- Combine dry ingredients in a large bowl. Stir until well mixed, breaking up any large lumps of brown sugar.
- Add oil, water, and vanilla. Stir until combined. It may take some time to incorporate all of the flour.
- Roll dough into 1 inch balls or drop by spoonfuls onto a baking sheet lined with parchment paper.
- Bake at 400 degrees F for 8-10 minutes until bottoms just start to brown. Allow to cool on a rack.
