Vanilla Coffee Mix

ingredients
- 1⁄3 cup instant coffee
- 1 cup instant dry milk powder
- 1⁄2 cup powdered coffee creamer
- 1⁄3 cup sugar (or Splenda)
- 1⁄4 cup vanilla instant pudding mix (Sugar Free works well but use less volume. I used 1 1/2 Tbsps)
directions
- Measure all of the ingredients into a dry bowl.
- Use a fork to combine everything evenly.
- You can powder everything in a blender.
- Transfer the mixture to a resealable container, or a pretty jar.

To Prepare:
- Place 3-4 Tbsp of dry Vanilla Cafe mix into a coffee cup.
- Add hot water to fill up the cup (about 3/4 cup hot water).
- Stir and serve.

This is great! I'm afraid I'm one of those who just can't make a recipe straight, without "fixing" it here or there, but this one I did JUST as the recipe called for, except the one suggestion from Sweet PQ about doubling the sugar free pudding for extra vanilla. I used the blender to blend the coffee and everything together. And I'm glad I did! It wasn't TOO sweet, and was creamy and will be a standard for me now! The extra pudding may make it a little thicker. I like flavored coffee every morning, and have been spending oodles on the mixes. Now I will make them myself!

I love vanilla coffee and this recipe delivers! I made it with decaf coffee, Splenda and sugar-free pudding, which I increased to 3 tablespoons (what can I say? I love vanilla!) I ended up switching the amounts of dry milk & creamer, just because I had more of the creamer than milk powder. The end result was still creamy & flavourful. Made for Partying The Diabetic Way-Dec'09. A definite make-again!

This coffee is yummy, very rich and creamy. I had french vanilla powdered creamer on hand and used sugar instead of Splenda. I missed if using sugar free instant vanilla pudding use 1 1/2 tablespoons and used 1/4 cup. Still a very nice cup of coffee. If you enjoy flavored coffee's definitely give this one a try!
