Upside Down Ham Loaf

- 2 tablespoons butter
- 1⁄4 cup molasses
- 8 -12 pineapple chunks
- whole cloves
- 4 cups cooked ham, ground
- 1 cup breadcrumbs
- 2 tablespoons onions, grated
- 1⁄2 teaspoon dry mustard
- 2 eggs, slightly beaten
- 1 dash cayenne pepper
- 1⁄2 cup pineapple juice
directions
- Melt butter in bottom of greased loaf pan or casserole; cover with molasses. Stud pineapple wedges or cubes with whole cloves and arrange in molasses.
- Combine ham and remaining ingredients, pack into pan or casserole on top of pineapple.
- Bake covered in moderate oven (350F) for 30 minutes. Turn upside down on hot platter.

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
