Tuna over Rice Oman

ingredients

• 2 tablespoons butter
• 1 onion, chopped
• 1⁄4 cup bell pepper, chopped
• 2 garlic cloves, chopped
• 2 tomatoes, chopped
• 3 tablespoons parsley, minced
• 1 tablespoon cilantro, minced
• 16 ounces tuna, it said 2 cans
• 1 tablespoon lemon juice
• 1 teaspoon turmeric
• 1⁄2 teaspoon cumin, it said 1 tablespoon, that might over power this dish
• 1⁄2 teaspoon cayenne
• 4 cups rice, cooked

directions

1. saute onion in butter
2. add bell pepper and garlic
3. saute until done translucent
4. add tomatoes and herbs and spices
5. add tuna undrained juice and all
6. mix.
7. cook until tomatoes are soft
8. cover with rice and let set covered 10 minutes
9. flip over on plate with tuna mix being on top.

I have made this several times using tuna from Sitka Salmon Shares rather than canned tuna. Also use one can of fire roasted tomatoes instead of fresh. It's wonderful and hearty. The flavors are so unique - cumin, turmeric, cilantro and parsley. Thank you Diana B.
