- 2 1⁄2 cups mango nectar
- 1⁄2 cup crown royal rye whiskey
- 3 tablespoons apricot jam
- 4 garlic cloves
- 1 inch piece ginger
- 1 (398 ml) can sliced peaches
- 1⁄4 cup yellow spicy mustard
- 1 cup brown sugar
- 5 kg spiral sliced ham
directions
- Preheat oven to 325F.
- peel and smash garlic. peel, slice, and smash ginger.
- add mango nectar, crown royal, apricot preserves, garlic and ginger to a saucepan over medium heat. Simmer for 20 minutes.
- place ham bone side down in baking pan. rub all over with mustard and then brown sugar.
- drain peaches, scatter around bottom of pan.
- remove garlic and ginger, pour glaze into bottom of pan.
- Place pan in oven and bake for 2.5 hours, or less if it starts to get too crispy and browned. After half an hour, start basting every 20 minutes with pan juices.
