  • Saute chicken in large pot, until no longer pink.
  • Add chicken broth to pot, and turn heat to med/high heat.
  • Add lemongrass, lime zest, ginger, garlic, onion, and mushrooms, and turn heat down to simmer.
  • Add lime juice, sweet chili sauce, sambal olek, and fish sauce. Stir well.
  • Cover pot, and allow soup to simmer until onion is soft, approx 20 minutes.
  • Just prior to serving, stir in coconut milk and coconut cream, tomatoes. Be careful soup does not boil.
  • Ladle soup into bowls, and garnish with cilantro.
  • Pairs well with sticky rice!
