- 2 chicken breast halves, choped
- 8 cups chicken broth
- 2 tablespoons lemongrass paste
- 1 lime peel, zested
- 2 inches gingerroot, chopped
- 6 garlic cloves, minced
- 1 yellow onion, chopped
- 2 tomatoes, chopped
- 2 cups mushrooms, chopped
- 1 lime, juiced
- 4 tablespoons sweet chili sauce
- 2 tablespoons sambal oelek
- 1 (15 ounce) can coconut milk
- 1 (15 ounce) can coconut cream
- 2 tablespoons fish sauce
- 1⁄8 teaspoon curry powder
directions
- Saute chicken in large pot, until no longer pink.
- Add chicken broth to pot, and turn heat to med/high heat.
- Add lemongrass, lime zest, ginger, garlic, onion, and mushrooms, and turn heat down to simmer.
- Add lime juice, sweet chili sauce, sambal olek, and fish sauce. Stir well.
- Cover pot, and allow soup to simmer until onion is soft, approx 20 minutes.
- Just prior to serving, stir in coconut milk and coconut cream, tomatoes. Be careful soup does not boil.
- Ladle soup into bowls, and garnish with cilantro.
- Pairs well with sticky rice!
