Tofu Loaf

This dish is from an older cookbook, Tofu Cookery. I used the bread crumbs but will probably use more than the recommended amount next time in hopes of holding the loaf together better.

ingredients
- 1 1⁄2 lbs tofu, mashed
- 1⁄3 cup ketchup
- 1⁄3 cup soy sauce
- 2 tablespoons Dijon mustard
- 1⁄2 cup parsley, chopped
- 1⁄4 teaspoon black pepper
- 1 medium onion, chopped fine
- 1⁄4 teaspoon garlic powder
- 1 1 cup rolled oats or 1 cup corn flakes, crushed
directions
- Preheat oven to 350 degrees.
- Mix all ingredients together.
- Put 1/4 cup oil in a loaf pan, then press the mixture into the pan.
- Bake for about 1 hour.
- Let cool 10-15 minutes before trying to remove from pan.
- Garnish with ketchup and parsley. Also good sliced and fried for sandwiches the next day.

I just became a vegetarian and have never eaten tofu before. I just made this and had a slice. I loved it!! Very tasty. I changed a couple of things in the recipe. I used 1 cup of bread crumbs plus a 1/2 cup of rolled oats. Used a shallot instead of an onion and added two egg whites. The texture is perfect. It is moist and it held together. I did press the tofu before baking to get out the water. I am so happy with this recipe. Thank you!1Replies 1
