ingredients
- 1 (28 ounce) can whole canned peeled tomatoes
- 2 (10 ounce) cans Ro-Tel tomatoes (fire roasted is best, but use any variety you like)
- 1 green onion, diced
- 1 small shallot, diced
- 1 small jalapeno pepper, diced
- 3 fresh garlic cloves, diced
- 1⁄2 cup chopped fresh cilantro
- 1 1/2 lime, juice of
- 1⁄4 cup sugar
- 1 tablespoon kosher salt
- 1 teaspoon fresh ground black pepper
- 1 teaspoon ground cumin
- 1⁄2 teaspoon chili powder
- 1 dash cayenne pepper
directions
- drain Ro-Tel tomatoes
- do not drain whole peeled tomatoes.
- add all ingredients to a blender.
- pulse on chop mode just until well blended.
- you can add more or less lime juice, cilantro, or jalapeño to taste. If you leave the seeds in the chopped jalapeños the salsa will be more spicy, remove the seeds for less spice.
- serve with tortilla chips.
- enjoy!
