Thai Style Curry

8 cups
ingredients
- 1 cup carrot, diced
- 1 onion, diced
- 1⁄2 cup green bell pepper
- 1⁄2 cup red bell pepper (can also use yellow)
- 2 garlic cloves
- 4 -5 small zucchini, diced small
- 1 cup tomato sauce
- 2 tablespoons peanut butter
- 2 tablespoons Braggs liquid aminos (or 1-2 Tbsp soy sauce)
- 1 tablespoon curry powder
- 1 cup garbanzo beans (chickpeas) or 1 cup lentils, cooked
- 1 cup frozen peas
- salt, to taste
- cooked rice
- 1⁄2 cup fresh cilantro (optional)
directions
- Place diced carrots, onion, peppers, and garlic (not the peas yet) in a kettle with a small amount of water and curry powder. Simmer about 5 minutes until tender.
- Add zucchini, cover, and simmer 5 more minutes.
- Blend all the remaining ingredients, except the peas and garboanzos or lentils, in a blender until smooth.
- Add the blended ingredients, the peas, and the garbanzos or lentils to the rest of the vegetables. Heat and serve over rice.

Thank you Enjolinfam! This recipe was an absolute winner! I made minor adjustments - I only used 2 zucchinis and once all the veg had been sauted . I blended about a third of them with the sauce ingredients which made it lovely and thick. The peanut butter was the perfect amount too!! Just enough so it had a lovely peanutty aroma and just the right amount of peanut taste. Made for the Voracious Vagabonds - ZWT 6

A huge hit, we enjoy Thai curries and this well-received by all, mild enough for the youngsters but plenty of flavour for the adults! I subbed chicken for the beans, again, for the youngsters, and didn't blend the ingredients as directed, preferring a more 'chunky' curry, it certainly doesn't take away from the taste. I'll happily make it again with beans and/or lentils. I used a seasoned rice, but in future I'll stick to a plain steamed rice, the curry has plenty of flavour without adding to it! Lovely recipe, Enjolinfam!

Update: We've moved back to the states, and are experiencing the joys of living in Wenatchee, WA for the first time! I'm spending most of my time in the kitchen canning, freezing, and drying fruit now and loving it!

I, Mollie, studied Nutrition so I try to make most of our meals healthy while still tasting great! Our girls love helping us cook...and eat! We're vegetarian and love eating healthy without missing any flavor! We try to eat mostly vegan, so we have many vegan recipes posted. We are world traveling missionaries and students that have visited many countries and have lived in the States, South Korea, and are currently in the Philippines. So we always need to adjust our menu based on the food available. Zaar has been a tremendous help!
