  • Heat butter and oil in a skillet, add garlic.
  • Add shrimp and cook until pink, about 2 minutes.
  • Add wine and half of tarragon, simmer until shrimp are pink.
  • Stir in remaining tarragon, salt and pepper to taste.

    This has an excellent flavor, we really enjoyed the addition of the tarragon. It goes together is short order and is very good. Made for ZWT's trip to Italy.

    I was in the mood for shrimp and Scampi is my fav, but was looking for something differant. Never had tarragon on it before. It was outstanding. I only used half the shrimp, as it was just me and all of the sauce, with a wee bit more butter. ;)

    The tarragon makes this scampi deliciously different. I was a little doubtful, but it really does work with the shrimp. We love garlic too and I did mince the 6 cloves to increase the flavor and bite. The juices were happily sopped up with crusty bread. We really enjoyed this recipe, Chia.
