- 2 cucumbers, thinly sliced
- 1 teaspoon salt, divided
- 2 tomatoes, chopped
- 1⁄4 cup cider vinegar
- 2 tablespoons canola oil
- 1 tablespoon honey
- 1⁄2 teaspoon celery salt
- 1⁄2 teaspoon dried basil
- 1⁄2 teaspoon ground mustard
- 1⁄4 teaspoon garlic powder
- 1⁄4 teaspoon dried oregano
- 1⁄8 teaspoon cayenne, pepper- (optional)
directions
- place cucumbers in a strainer, sprinkle with 1/2 tsp salt and toss. Let stand for 30 minutes. Rinse and drain well. Place in a large bowl, add tomatoes and onion. In a small bowl, whisk together the remaining ingredients. Pour over cucumber misture and toss. cover and chill for several hours. Serve with a slotted spoon.

Very fresh and tangy salad. We enjoyed it. No onion was mentioned in the ingredients but the instructions said to use one. I chose to add a medium red onion, chopped finely. I omitted the regular salt in the dressing and used only celery salt. The dressing is perfect, just the right taste. Thanks for posting. Made for PAC, Fall 2009.
