  1. Super easy for a weeknight and all cooked in the one pot, great for those nights when your going to be late home, I also added mushrooms and used a jar of salsa with one tin plain tomatoes and used brown rice as that's all I had. A keeper for my crock pot cookbook. Thanks for posting!

I halved this recipe, as it was just the two of us eating. <br/>I couldn't find Mexican tomatoes, so I improvised, using a tin of regular tomatoes and adding some diced red onion, garlic powder, and some diced nacho jalapenos. I also subbed red pepper for the celery, as I didn't have any.<br/>I did add a little extra water near the end of cooking, as it was drying up and the rice wasn't quite cooked. I did however, end up over-cooking it slightly.<br/>This was really delicious, I loved the taco flavour, and the spice from the jalapeno was just right..DH and I both loved it...DH wanted tacos, so we actually used this mixture in the shells and topped with cheese-they were completely awesome, and we demolished them with real gusto!! DH wants to make it again and put it into burritos next time!!<br/>Thanks Doug...another great recipe from your collection.

  4. Great recipe and so easy to prepare - just a quick fix and forget it! When I put everything in the crock pot it didn't seem like there was going to be enough liquid, but no worries - it cooked up perfectly. Flavorful and filling - thanks for sharing your recipe!
