Sweet Potato Pie...Pumpkin Style

"This isn't a Sweet Potato Pie, or a Pumpkin Pie but more of a Sweet Potato Pie...Pumpkin Style. Ok, whatever...it's just delicious! This pie always makes it to our Thanksgiving Table year after year. Great as a make-ahead recipe, the flavors develop and blend together as they sit."

  • Combine dry ingredients together, set aside. Whisk eggs and blend in dry ingredients. Stir in sweet potatoes, then milk.
  • Pour into pastry lined pie pan. Bake at 425°F for 10 minutes. Reduce heat to 350 °F and bake for 40 more minutes. Remove from heat, cool and refrigerate before serving. Serve cold with fresh whipped cream -- or maybe not!
  • Note: Flavors intensify after 1-2 days in the refrigerator. Pie can be made up to a week in advance.
