ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 garlic cloves, pressed
- 2 (15 ounce) cans black beans, drained
- 2 medium sweet potatoes, peeled, boiled, and mashed
- 1 teaspoon cumin
- 6 flour tortillas
- 6 tablespoons cilantro, chopped
- cheese, shredded
directions
- In a 2- or 3-quart saucepan, saute onion and garlic over medium-high heat.
- Add beans, mashed sweet potatoes, and cumin. Mix well.
- Warm the tortillas and make burritos with the cheese.
- Good with salsa and sour cream.

Yum! I knew with the combo of sweet potatoes and beans this would be a winner for me; DH and DS are usually harder to sell on veg night. Not with this, though! They both gobbled it up, and all of us enjoyed it in different ways: DH with tortillas, DS with chips, and me with it mixed in Mexican rice. We all agreed that salsa and cheese are necessary here; maybe next time I will throw in a can of tomatoes? I also threw in about 1/2 t kosher salt, which I think enhanced the flavor nicely. Oh, and I boiled the potatoes whole, diced them, and threw them in with the beans, etc. Thanks for posting! Recipe-napped for Veg*n Swap #22.

Love the black bean and sweet potato combo! Confession - I really don't care for the consistency of mashed sweet potato, so I cubed and cooked it in the pan with the rest of the ingredients. Due to food allergies, I served with corn tortillas, rather than flour, and made tacos with the sour cream and salsa. It was so enjoyable! Thanks for sharing!

I halved this recipe to make as a dip for my hubby and I tonight with baked tortilla chips topping with the cilantro. Followed the directions as stated to make the filling and we both felt that it was very dry. So we decided to top with sour cream and shredded cheddar cheese - the taste was fine and we enjoyed the sweet potatoes and beans w/ cilantro and cumin but the texture was just off for us. I cooked my sweet potato in the microwave; next time I would boil chunks of sweet potato in water and then mash, I think that would help the consistency greatly. Made for 1-2-3 Hit Wonders.

Great flavor! I made burritos filled with this mixture plus a little shredded cheese and sour cream. Then I smothered them with a New Mexican red enchilada sauce (similar to recipe #249205) and topped them with a scoop of guacamole. DH and I gave them 5 stars, DD & DS's girlfriend (both vegetarian teenagers) gave them 4 stars, and DS said I needed to put meat in them! Thanks for a great recipe!
