  • Fry bacon in medium skillet until almost crisp.
  • Fry onion in bacon grease until soft.
  • Remove onion and bacon from grease.
  • Place spinach in grease, stirring until hot.
  • Return onion and bacon to skillet.
  • Mix sugar and vinegar.
  • Beat egg then mix with vinegar and sugar.
  • Pour over spinach.
  • Cook 2-5 minute.
  • Salt to taste.

  2. This is really good. It doesn't tell you in the recipe, but I put the bacon and onion back into the spinach. Since I am diabetic, I used about 1/8th cup Organic Raw Blue Agave {a low glycemic organic sweetener- which is slowly absorbed into the body and prevents blood sugar spikes. It's 1 1/4 times sweeter than sugar, but tastes really good. I can't stand artificial sweeteners.}. Thanks for the good recipe for spinach.

  1. My Mom made this when I was a kid. Never written down. But I watched. She never used onion. So I took that out. It was way too sweet so I added another box of spinach 2 more Tbls. Of vinegar and another egg. Turned out like I remember. So for 1 10oz. Box of spinach. I would use 2 Tablespoons of sugar. Same 2Tbls vinegar. My mom also added about 1 to 2 Tbls milk

<p>I am slowly cutting out grains, legumes, potatoes, sugar and peas. I don't use flour to brown stuff and use glucomannan as a thickening agent. If these other things are in a recipe I don't add them.</p>
