- 1 (16 ounce) package rotini pasta
- 1 lb lean ground beef
- 1 (1 1/4 ounce) package taco seasoning mix
- 4 garlic cloves, minced
- 1 medium onion, minced
- 2 cups chunky salsa
- 1 (15 ounce) can chili beans, drained
- crushed red pepper flakes
- 1 tablespoon fresh cilantro, chopped (optional)
- salt
- pepper
- 1 cup 2% mexican cheese blend
- 1 (8 ounce) can sliced ripe olives (optional)
- 2 fresh jalapeno peppers, minced (optional)
directions
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- In a skillet over medium heat, brown ground beef and drain. Add garlic, onion and crushed red peppers and saute until translucent and aromatic.
- Add taco seasoning and mix well.
- Add salsa and beans, olives and jalapeno's and warm through.
- Season with salt and pepper and sprinkle on cilantro.
- Combine all in large pot. Serve and add cheese to each individual bowl.

Really good and easy to make. It tastes like chili mac. I left out the cilantro and didn't need the pepper. It turned out really spicy for some reason (a little too spicy for DH). I only used a pinch of red pepper flakes and I left out the jalapenos altogether because there was already a little jalapeno in my salsa. I used Recipe #59635 and it really doesn't taste very spicy to me on chips and my taco seasoning isn't very spicy either, but I use bulk taco seasoning and I think I put in a bit more than 1.25 oz, so maybe that was the problem. Maybe it was just the combination of that particular seasoning and salsa, so I'll try our usual store bought salsa next time. I'd also use a smaller can of olives and add a little more cheese next time just for personal taste. Thanks for sharing.

this is delicious, I made as a take-home meal for my DS using a few additions, I used 2 small onions, used 2 teaspoons crushed chili flakes and omitted the cilantro, also I used cheddar cheese and increased the amount, this is nice and spicy with lots of flavor, just the way my DS likes it, thanks for sharing ChicagoRN, will make again soon!
