Super Pancakes

"this is an adaptation I am working on. I want a low-carb, high protein, high fiber, vegan pancake. My sister is doing body-for-life and I am getting back into weight training/ bodybuilding diet food so I need some new cheap fuel. Any suggestions are welcome, this is a work in progress."

directions

  • grind flaxseed in food processor, coffee grinder, blender, etc. until fine & almost pasty.
  • combine wet ingredients in microwaveable container.
  • microwave on high for 1 minute.
  • combine dry ingredients in bowl.
  • combine wet ingredients & melted margarine.
  • blend wet ingredients & dry ingredients.
  • fry on griddle.

I am a single mother of a toddler. I have a BA in English and an MSW in Health, Mental Health, and Disability. I have been cooking and baking since I could unwrap a package of cream cheese (my Mom used to sell cheesecake to local dinner clubs and restaurants. I grew up eating food my mother prepared from scratch. Our meals were often eclectic: Ants Creeping in the Trees (a Chinese dish w/o ants), Mah Pose Bean Curd, Spinach Lasagna, Taco Salad, Burritos, Kasha, homemade yogurt, homemade cheese, and lots of other great stuff. Now, I have a family full of vegans and meat eaters. I tend to shy away from meat in my own diet, but that is only b/c I don't have a taste for it. I love to manipulate recipes and try to maximize nutrition in everything I make without compromising taste, texture, or quality. For years my favorite recipes have come from Bon Appetite, but now I am a die-hard Recipezaar fan.
