  • 1. peel cucumbers, I scoop the seeds out of the larger ones to avoid texture issues, Slice or chop coarsely. Coarse chop tomatoes into 1/2 to 3/4" chunks.
  • 2. Finely slice and quarter red onion. Add to cucumbers and tomatoes, splash Mirin over and stir.
  • 3. Put savory, dill, black pepper and lemon pepper in mortar and pestle, grind into fine powder, add to cucumber mixture. Add in dry mustard and toss well.
  • 4. Refrigerate for at least 1 hour before serving.
