Summer Fresh Cucumber Salad

ingredients
- 3 -4 cups fresh cucumbers
- 2 -3 tomatoes
- 1⁄2 red onion
- 3⁄4 cup mayonnaise
- 1⁄2 cup sour cream
- 2 tablespoons mirin rice vinegar
- 2 teaspoons dill weed
- 1 teaspoon summer savory
- 1 teaspoon lemon pepper seasoning
- 1⁄2 teaspoon black pepper
- 1⁄2 teaspoon dry mustard
directions
- 1. peel cucumbers, I scoop the seeds out of the larger ones to avoid texture issues, Slice or chop coarsely. Coarse chop tomatoes into 1/2 to 3/4" chunks.
- 2. Finely slice and quarter red onion. Add to cucumbers and tomatoes, splash Mirin over and stir.
- 3. Put savory, dill, black pepper and lemon pepper in mortar and pestle, grind into fine powder, add to cucumber mixture. Add in dry mustard and toss well.
- 4. Refrigerate for at least 1 hour before serving.
