Stuffed Bell Pepper Stew

"I love stuffed peppers but hate all the work. This is a stew that takes like stuffed peppers. We love this stew!"

Ready In:




  • In a Dutch oven brown beef and drain off fat.
  • Add the peppers to the browned meat and sauté for 3-5 minutes.
  • Cook rice following instructions on box.
  • Stir in the rest of the ingredients accept the rice. Reduce heat to low, cover and simmer for 30 to 45 minutes. Stir in rice and heat through.
  • Pour into bowls and top with mozzarella cheese if desired.

    Absolutely love! Only thing I changed is Rotel in place of the diced tomatoes. I have made several times and the pot is always empty! Cut down in the carbs by using riced cauliflower in place of rice!

    Nice filling soup! I was able to use 4 small green peppers from our garden to make this. I only had one can of tomato sauce so I added a small can of tomato paste and one small can of water. Also instead of canned diced tomatoes I uesed about 1 1/2 cups of fresh diced tomatoes. Great topped with the mozzarella cheese.

    This is, for me, a great start. I totally love Stouf....'s stuffed peppers and am seeking to duplicate that taste. I shall add some sauteed onions and may try a bit of sugar in my next attempt (or in my leftovers). As is, it's lovely. (Ah, also, I used a red and an orange pepper--I couldn't find my green peppers.)

    This is so great to make when you don't have much time but have a craving for stuffed peppers!! At first, I thought there would be too much sauce, but turned out to be just the right amount!! Might add some Tabasco or hot peppers next time to add a bit of kick. This was a wonderful weeknight dish! Thanks bmnichol! :)

    Went to the Market Tag 2007 ~ Wow, talk about comfort food! I cut this in half as there's only two of us and didn't quite use as many tomatoes. I did add some red wine to it and used basmati rice. Sprinkled in some basil and oregano as I don't have 'Italian seasoning.' I also cooked it in the crock pot. Looking forward to making this again. I have two boys Eddie 18 and Brandon 10. I have been with my hubby for 16 years. I work full time outside the home and my boys keep me busy at home. Eddie is a singer and base guitar player in a band and Brandon races go karts. We also have a Collie/Beagle mix named Sugar. I love to cook and try out new recipes. I usually start with a recipe and tweak to my families liking. My Rating System: 5 Stars = The whole family enjoyed the dish and it will be added to my TNT cookbook. Book #220911. These recipes will be made again and again. 4 Stars = Recipe was good, but needed some modifications or it was good but not something we would want on a regular basis. Also goes into my TNT-4 star recipe cookbook. Book #220912 3 Stars = It was edible, but won't be made again. 2 Stars = Needs some kind of major adjustments. 1 Stars = Inedible, didn't work, waste of ingredients.
