Steakhouse Shepherd's Pie

- 2 lbs idaho potatoes, peeled and cut into chunks
- salt
- 1⁄2 tablespoon extra virgin olive oil
- 4 slices good quality bacon or 4 slices pepper bacon, chopped
- 2 lbs ground sirloin
- 1⁄2 lb button mushroom, quartered
- 1 onion, chopped
- black pepper
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 1⁄2 cups beef stock, divided
- 2 tablespoons Worcestershire sauce
- 1 egg yolk
- 3 tablespoons sour cream
- 1⁄2 lb blue cheese, crumbled (recommended ( Maytag)
- 3 -4 tablespoons chives
- 1 teaspoon paprika

- Place potatoes in a pot; cover with cold water and bring up to a boil. Season water with salt and boil potatoes until tender, 12 to 15 minutes. Heads up: save a ladle of starchy cooking water just before draining.
- Heat a skillet with high sides over medium high heat.
- Add extra-virgin olive oil, half a turn of the pan and add the bacon.
- Crisp bacon and remove to paper towel lined plate.
- Add sirloin to the pan and caramelize the meat, 4 to 5 minutes.
- Add in the mushrooms and onions and cook until tender, 6 to 7 minutes more; season with salt and pepper.
- While meat cooks heat a small sauce pot over medium heat and melt butter; whisk the flour into butter; cook 2 minutes; whisk beef stock into flour; add Worcestershire sauce.
- Season sauce with salt and pepper, to taste.
- Thicken 6 to 7 minutes.
- Pour gravy over meat.
- Turn on broiler.
- Temper egg yolk by beating it with the starchy potato cooking water.
- Place drained potatoes back into the pot you cooked them in to dry them out a little.
- Mash potatoes with egg yolk and sour cream then fold in crumbled blue cheese and chives.
- Season the potatoes with salt and pepper and spread across the top of the meat in an even layer.
- Garnish the potatoes with paprika.
- Place under broiler to crisp and brown the potatoes, 2 to 3 minutes.
- Serve immediately right from the hot skillet.

A great blend of flavours and a deliciously creamy potato topping: we loved this. My only changes were minor. I omitted the worcestershire sauce and added some merlot and I used cheddar rather than blue cheese (personal taste preferences). A really delicious and easy family meal.I made up the meat mixture the night before we were going to eat it.I used Stilton in the potato mixture,and after topping the meat mixture with it,I stuck it into the oven for about 45 mins.It was lovely...the peaks in the potato mixture had gone wonderfully crisp,while the rest of it was smooth and creamy.The meat was tasty,with just the right amount of moisture to it.the children also enjoyed it ( 4 and 2 years). This is so good! I saw it on 30 Minute Meals and made it a few days later. I did take a short cut by using canned beef gravy and added worchestershire sauce and used sharp cheddar since I had no blue cheese at the time. I also successfully froze and reheated this dish. I froze the mashed potatoes (omitting the egg) and meat mixture separately, then reheated the potatoes stove top to thicken up again and the meat in the microwave. I didn't bake in the oven after that, but I'm sure you could. It was still great!

I live on a very large farm here in West Virginia. We really do live off the land. I plant a large garden, I freeze, dehyrate and can everything possible. We raise beef cattle and hunt wild game. It's a family thing.
I met my husband at work. We got stuck on night shift together and he seemed to grow on me like a wart. We married 5 months after we started dating. We have now been married 11 yrs. He's a great husband and father too our two children. Our oldest is in the 6th grade and youngest is in the 5th grade. We have lived all over the east coast. We spent 5 years in South Carolina. I would have to say it was a great 4 years. I learned so much about that area and experienced alot of different foods while there. I truely miss the people from there.
A little about me. I'm a SAHM. Most of my time here alone is spent playing euchre, canning, gardening, cooking (a lot of OAMC), flipping thru my cook books (and i have plenty) and browsing thru Zaar! I just love it here. Trying to add a lot of our family favorites.
I enjoy traveling, reading, camping, fishing, hunting, gardening, canning, bbq-ing, bon fires, entertaining, baking, playing board and card games with the kids, swimming, photography, and just being with family and friends.

4 stars ~ like it, will make again with minor changes to suit our tastes
3 stars ~ had to make major changes but got it to work for us.
2 stars ~ too many changes needed, waste of my time.
1 star ~ just terrible, couldnt get it to work out. waste of money and time. I think I want to cry now.
