Spinach Salad

- 1 lb spinach
- 3 -4 hard-boiled eggs
Dressing
- 1⁄2 cup salad oil
- 1⁄4 cup sugar
- 2 tablespoons vinegar
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon dry mustard
- 4 tablespoons grated onions
- 8 slices crisp bacon
directions
- Mix dressing ingredients in a blender, adding the sugar last. Blend well.
- Slice eggs over the spinach and top with the dressing.

- Very easy spinach salad with ingredients I always have on hand. The addition of the grated onion in the dressing was a nice change from my normal spinach salad dressing. Made for Spring 2011 Pick A Chef.

I'm a college student who is not going to gain the "freshmen 15." I enjoy cooking and I can't stand to eat out a lot. It just makes me feel so unhealthy. My favorite thing to make is desserts. I enjoy hearing how well a meal is after the hard work that is put into it. I live on a ranch so our family has always had sit down meals, which i love.
