ingredients
- 1 tablespoon vegetable oil
- 1⁄3 cup raisins
- 1 garlic clove, minced
- 1⁄2 cup pine nuts (or pumpkin seeds, or raw cashews)
- 2 gala apples, cored and chopped
- 1⁄3 cup Italian sausage, cooked
- 6 ounces fresh Baby Spinach
- 1 teaspoon parmesan cheese
directions
- Heat oil over medium heat. Sauté raisins, garlic and nuts until garlic is cooked but not browned.
- Add apple and sauté until softened, about 5 minutes. Add sausage to reheat. Add spinach and cook until wilted. Sprinkle with cheese for serving.
