Spicy Pumpkin Cake

• Yields: 24 cup cakes
• Serves: 8-12

ingredients

• 2⁄3 cup shortening
• 1 2⁄3 cups sugar
• 1 teaspoon baking soda
• 1 1⁄4 cups pumpkin pulp (not pie filling)
• 2 eggs
• 1 teaspoon allspice
• 1 teaspoon cinnamon
• 2 1⁄2 cups flour
• 1 1⁄2 teaspoons baking powder
• 1 teaspoon salt
• 2⁄3 cup milk
• 3⁄4 cup walnuts
• 1 teaspoon ginger
• 1 teaspoon nutmeg

directions

1. Mix all together in 1 bowl.
2. Pour into greased 91/2"x13"x 2" pan.
3. To make 24 cup cakes, spoon batter into paper lined muffin pan.
4. Bake at 350 degrees for 25-35 minutes .
5. Less time for cup cakes, of course.
