- 1 (14 ounce) can coconut milk
- 1 tablespoon red curry paste (or to taste)
- 1⁄2 cup peanut butter
- 2 tablespoons sugar
- 2 tablespoons rice vinegar
- 1 tablespoon fish sauce

directions
- Stir coconut milk until smooth (or shake the can before opening). Heat half in a sauce pan, add curry paste. Sir until fully blended and turns pail amber.
- Blend peanut butter, sugar, rice vinegar, fish sauce and the remaining coconut milk. Cook 8 to 10 minutes stirring frequently until sauce thickens.
