Spicy Lemon Chicken

  • Using a sharp knife, cut the chicken breast into dice and place in a shallow dish. Season with salt and pepper.
  • Combine the remaining ingredients, except the cilantro, and pour over the chicken.
  • Leave to marinate for at least an hour, mixing occasionally.
  • Strain away the marinade from the chicken and reserve.
  • Preheat a non-stick wok or frying pan and dry-fry the chicken over a high heat for 5-6 minutes, turning it to seal all sides.
  • Add the reserved marinade and continue to cook for a further 10 minutes to allow the sauce to simmer gently and thicken.
  • Stir in the fresh cilantro and serve.
