ingredients
- 6 chicken legs with thigh or 6 chicken breasts
- 2 tablespoons canola oil or 2 tablespoons olive oil
- 2 teaspoons paprika
- 1 teaspoon dried thyme
- 1 teaspoon chili powder
- 1⁄2 teaspoon ground cumin
- 1⁄2 teaspoon garlic powder
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
- 1⁄4 teaspoon ground nutmeg
directions
- Mix spice mixture (all ingredients except canola oil) in a food processor or by hand and set aside.
- Rub chicken pieces with olive or canola oil.
- Coat chicken pieces with spice mixture and rub some under the skin.
- Grill over medium heat for 35-45 minutes, turning as needed.
- You may also bake chicken at 350 ° F.
- for 40-45 minutes.

Dawn, Thanks for suggesting this recipe. I made it this weekend for "Atkins" friends, and they loved it. Said it had a nice spicy flavor. I left the cumin out, because DH dislikes it with a passion. I used 6 split (half) chicken breasts and baked them in the oven for about 35 minutes. Chicken was tasty & juicy, I'll definitely make this again.

I?m ?originally from Texas, but now live in Florida. Still gotta have that spice though....love chipotle peppers, habaneros, and jalapenos. This is a picture of myself & my 2 daughters taken in Dec'06. I am working on my graduate degree, & still work as a nurse prn. When I'm not cooking and eating what I cook... I head for the gym to work out. As far as cookbooks, I love the church/ community cookbooks, where someone has dug out old handwritten recipes by granny and shared them with others-those are the best kind. If I had a month off, I'd for sure go hiking, would love to visit Australia and New Zealand.?
