  • 1 lb spareribs, cut into bite-sized chunks
  • 2 teaspoons light soy sauce
  • 1 tablespoon shaoxing wine
  • 1 teaspoon gingerroot, fresh finely chopped
  • 1 tablespoon fermented black beans (purchase from Asian market)
  • 1 teaspoon chili flakes, to taste

  • Bring a large pan or wok of water to a boil over a high heat. Add the ribs to blanch.
  • Drain the ribs and place in a heatproof bowl with soy sauce, shaoxing wine, and ginger - mix. Top with black beans and generous amounts of chili flakes.
  • Steam ribs over high heat for 30 minutes or until cooked through.
