Smoked Sausage Surprise

- 1 1⁄2 lbs smoked sausage (or Polska Kielbasa, cut into 1/2 thick slices)
- 1⁄2 large sweet onion (minced)
- 3 -4 large potatoes (peeled and cut into bite size pieces)
- 1 (10 1/2 ounce) can cream of mushroom soup
- 1.5 (10 1/2 ounce) cans water (use soup can)
- 1 (6 ounce) can mushroom stems and pieces (well drained)
- salt & fresh ground pepper
- 1 teaspoon thyme
- 1⁄2 teaspoon dill weed
- 2 teaspoons olive oil
- 8 ounces frozen corn
directions
- In large skillet (preferably non-stick) over med high heat add olive oil and bring to smoke point.
- Add onions and let cook just until starting to brown, add potatoes.
- When potato edges are browned add soup and water and spices. return to boil and add mushrooms, Sausage, and corn.
- Reduce heat to med low and allow liquids to reduce to 1/2 (liquid should thicken and turn a med brown in color.
- Serve with tossed salad and crusty bread for a delicious and quick meal.
- PS My fussy grandkids call this "grandpas' supper" and it's all they want when they eat at my place.

Been a batchelor most of my life, and raised by one of the best cooks I have ever seen. Mom was born and raised in Kentucky, and learned the down home type of cooking that put tasty nourishing meals on the table as economical as possible. We always raised two large gardens, growing everything you could imagine, with our own fruit trees, and raising our own chickens, pigs, and beef. We canned everything in the garden, and once every possible jar, crock, etc. was filled, my brother Steve and I were allowed to sell the remaining produce to buy school clothes and supplies. In other words, I learned to love to cook at my moms knees.
