Smoked Sausage and Sauerkraut

ingredients
- 1 (1 lb) package smoked sausage
- 1 (1 lb) package sauerkraut
- 1 (32 ounce) bottle V8 vegetable juice
directions
- Drain sauerkraut in a colander. Sit under running water for a few minutes to thoroughly rinse the brine.
- Place sauerkraut in shallow pan. Cut sausage in serving size pieces. Cut lengthwise almost in half and arrange on sauerkraut.
- Pour bottle of V-8 over all and simmer to blend flavors and heat sausage.
- Serve with mashed or fried potatoes. Yum!

I have never had sauerkraut before, but thought this would be a great recipe to try, being that it had "hotdogs" in it. My kids said that they hated it at first, but then my little boy went back and finished what I put on his plate, which wasnt a small portion. My DH and I thought it was good, but not great. It had a sour taste, but I am betting it is from the kraut. Thanks for this easy recipe, and SOOOO economical!
