Slow Cooker Cheesy Bacon Ranch Potatoes

  • 4 medium sized potatoes, unpeeled and cut into cubes
  • 1 large onion, thinly sliced
  • 12 lb bacon
  • 2 12 cups shredded cheddar cheese
  • 3 ounces ranch dressing mix, dry packet
  • 2 tablespoons butter
  • 12 cup sliced green onion


  • Cook the bacon until it is just done but not too crisp.
  • Line your slow cooker with aluminum foil. Leave enough to over hang so that you can wrap the potatoes on the top once in the slow cooker.
  • Spray the inside of the foil with cooking spray and layer half of the potatoes along the bottom. Next layer with half of the bacon, green onions, onion, ranch packet and top with cheese. Repeat the layers and top with cheese reserving ½ cup.
  • Cover the potatoes with remaining foil. This helps them to steam and cook perfectly. Cook on low for 4-6 hours in your slow cooker. Once finished, top with remaining ½ cup cheese and let melt on the top.
  • Garnish with fresh green onions if desired.

  1. This was a great way to make this loaded potato dish. The only change I made was to omit the onions and just use the green onions only. I covered the potatoes with parchment paper vs. foil and they turned out perfectly. Definitely a repeat at our house.
  2. We enjoyed these potatoes and makes for an easy peasy weeknight meal! It was a perfect recipe to make during the Holiday season when there is no time for zilch, nothing, nada. We enjoyed it as a side to meatloaf (which my husband made) and the only thing I did different was saute the onion prior to adding them to the crockpot (I don’t care for the raw oniony taste it can sometime impart when using a crockpot, so the sauteing takes care of that), otherwise followed exactly. They came out delightful. Thank you Bonnie for sharing. Made it for FYC.
