Skillet Sweet Potato and Plantain

  • Peel sweet potato and dice into small cubes.
  • Boil potato in water; until cooked. Drain, shake off as much water as you can.
  • Saute onion in 1 tbsp oil over med. heat for about 5 mins in large non-stick skillet.
  • Add other 1tbsp oil and plantain to skillet, increase heat to med. high. Saute till golden brown. Add cooked sweet potatoes. Using a metal spatula, saute all three ingred. for another 3-5 minutes seasoning to taste with sea salt, pepper, and ground cayenne pepper.
  • Serve with rice or in tortillas and salsa and/or guacamole. Enjoy!

  1. I just happened to have a sweet potato and a very ripe plantain that needed to be used, so I did a quick search and came across this recipe. So simple yet very delicious. The flavors were very nice together, especially with the caramelized onions. I'd probably add more cayenne as the other reviewers did. My husband enjoyed the dish with his favorite Tabasco.
     
  2. Loved it! I carmelized the onion in a pan and deep-fried the plantains and sweet potatoes. I used the "steam and mash" sweet potatoes and undercooked them in the bag, then threw them in the deep-fryer. Used Jamaican Jerk seasoning instead of cayenne.
     
  3. I used butter nut squash instead of sweet potato. Lots of cayenne and then lots of hot sauce while eating it. Served it on brown rice alongside a chick pea stew. Good!

I love to cook new and intresting foods. I have two young kids and I want them to try all different types of good food. I try to cook and eat healthy and encourage my family to as well ( its not always easy ;)
