Southern Cast Iron Skillet Sweet Potato and Pecan Casserole

- 3 cups mashed sweet potatoes
- 1 cup sugar
- 2 eggs
- 1⁄2 cup milk
- 1 teaspoon vanilla
- 1⁄2 cup butter
- 1 cup brown sugar
- 1⁄3 cup self rising flour
- 1⁄3 cup butter, melted
- 1 cup pecan halves
directions
- Preheat oven to 350 degrees.
- Mix the first 6 ingredients and pour into a greased cast iron skillet.
- Mix together the brown sugar, flour and melted butter; sprinkle on top of sweet potatoes.
- Sprinkle the 1 cup of pecans on top.
- Bake for 30 minutes or until a little brown and bubbly.
- Serve straight out of the skillet.
