- 1 1⁄2 lbs skinless chicken breast halves
- 4 medium size carrots
- 1 large yellow onion
- 3 celery ribs
- 1 1⁄2 cups broccoli
- 3⁄4 cup snow peas
- 1⁄2 zuchinni squash
- 3⁄4 cup bean sprouts
- 3 tablespoons of chopped garlic
- 8 ounces stir fry noodles
- 6 tablespoons oil, your choice
- 1⁄2 tablespoon black pepper
- 3⁄4 teaspoon ginger powder
- 2 tablespoons chopped garlic
- 4 tablespoons oyster sauce
- 1 teaspoon chicken bouillon
- 3 tablespoons soy sauce
- 1 teaspoon sesame oil
- 1⁄4 teaspoon dashi (optional)
- 2 tablespoons cornstarch
directions
- cut your chicken breast into half dollar size cuts. slice the chicken at an angle and then sprinkle it with pepper.
- slice your celery and carrots in half the long way and the cut them into 1 inch pieces.
- cut your broccoli into quarter size pieces.
- cut your onion into medium size pieces.
- slice your zuchinni into 2 inch string cuts.
- add 3 tablespoons of your oil to a saute' pan and turn the heat up high after 2-3 minutes add your chicken and keep moving it around. I like to use the pan to toss the chicken but you can use tongs. saute' for about 3-4 minutes about 80% cooked. Remove from pan and put in a bowl and cover it.
- Prepare your noodles: I used Thai Brown Rice Noodles, I have used spaghetti & Linguini before and it worked fine.
- Cook the noodle just enough to soften, don't completely cook it. Place the noodles in a bowl and cover.
- Do not clean pan, save the flavor, lower the heat to medium and add 3 tablespoons oil to the pan, place your carrots in the pan and saute' until just starting to brown on the edges. Add your celery, zuchinni and saute for 3 minutes. Add you onions, garlic and saute' for 3 minutes. Add your broccoli saute' 3 minutes.
- add your water boullion mix to the pan and mix all ingredients, add cornstarch mixed with 3 tablespoons of water to the pan and mix.
- Add your chicken, green onion and bean sprouts and noodles to the pan and mix. Add your soy sauce, oyster sauce, ginger and Dashi (Optional) Cover and simmer for 5 minutes on low heat setting.
