- 8 ounces silken light tofu
- 1 cup stir fry frozen vegetables
- 1 cup frozen green beans
- 1 cup frozen broccoli
- 1⁄2 cup frozen corn
- 1 cup frozen green beans
- 1⁄2 cup cooked Minute brown rice
- 2 tablespoons reduced sodium soy sauce
directions
- Spray a grill pan, george foreman, or nonstick skillet w/olive oil cooking spray.
- Put the tofu on, and turn occcasionally until equally browned.
- Meanwhile, put 1/4 cup water in another nonstick skillet, add in all vegetables and rice and cover. Cook until veggies defrost, and most of the water is absorbed.
- Stir in rice, add in 1 tbs of soy sauce.
- Put on plate, top with grilled tofu, and add remainder of soy sauce.
