Shrimp Okra Pilau

- 3 slices bacon
- 1 medium onion, finely chopped
- 1 small bell pepper, finely chopped
- 1 lb fresh okra, sliced (or frozen)
- 1 cup long-grain rice
- 2 cups cold water
- 1 lb fresh tomato, peeled and coarsely chopped (may use 14oz. can)
- salt and pepper
- 1 teaspoon flour
- 1 lb medium shrimp, shelled
- 1 dash cayenne
directions
- Cook bacon in large skillet until crisp. Drain on paper towels, crumble and reserve. In bacon fat remaining in skillet (about 3 Tblsp.), saute onion and green pepper over high heat, stirring until wilted (about 5 minutes). Add okra and cook over low heat about 10 minutes, stirring frequently. Meanwhile place rice in 1 1/2 quart saucepan with cover and add cold water. Bring to a boil, stir once, cover, and heat over lowest heat for exactly 12 minutes. Drain rice and add it to okra along with tomatoes, salt, pepper, flour and bacon. Cover skillet and continue to cook over low heat until rice is tender, about 15 minutes longer. During last 7 minutes of cooking, add shrimp and cayenne.
