- 2 boneless chicken breasts, cut into 1 inch pieces
- 1 tablespoon olive oil
- 3 tablespoons low sodium soy sauce
- 2 tablespoons rice wine vinegar
- 2 tablespoons honey
- 1 garlic clove, minced
- 1⁄2 teaspoon ground ginger
- 1 teaspoon cornstarch
- 1⁄2 cup green onion, chopped
- 2 teaspoons sesame oil
- 1 teaspoon sesame seeds
- 1 pinch salt and pepper
directions
- Season chicken breasts generously with salt and pepper on both sides.
- Heat Olive Oil in a large saute pan over medium-high heat.
- Add Chicken and saute for about 4-6 minutes, stirring occasionally until chicken is cooked through.
- While chicken is cooking, whisk together Soy Sauce, Rice Wine Vinegar, Honey, Garlic, Ginger and Cornstarch until combined.
- When chicken is cooked through, add Green Onion and soy sauce mixture to the pan and stir to coat chicken. Sauce will thicken quickly.
- Mix in Sesame Oil and remove from heat.
- Serve over quinoa or rice.
- Sprinkle with Sesame Seeds.
